I made these cucumber bites for an Hors d'oeuvre party a few months ago, and I will definitely make them again. Especially with springtime upon us, these bites are perfect! The garlick-y filling is an excellent match for the cold, crisp cucumber. They're incredibly simple to make (it took me all of 10 minutes to put them together) but so very pretty!
The original recipe calls for garlic-herb Boursin cheese, which I did use. Perhaps my palate is a bit unsophisticated, but while I loved how these tasted, I thought they would have been just as delicious using a flavored cream cheese spread instead. This would also reduce the cost quite a bit and probably appeal to a wider audience. Either way, these cucumber bites would make a perfect addition to a springtime luncheon, baby shower, or bridal shower!
Cucumber Bites with Garlic Herb Filling
For the filling:
1 (5.2 oz) package garlic herb Boursin cheese (or flavored cream cheese*)
2-3 tbsp. heavy cream
To serve:
1 cucumber, peeled partially or totally, as desired
1 (5.2 oz) package garlic herb Boursin cheese (or flavored cream cheese*)
2-3 tbsp. heavy cream
To serve:
1 cucumber, peeled partially or totally, as desired
To make the filling, place the Boursin in a small bowl. Add in 2 tablespoons of the heavy cream and stir with a fork until lightened and smooth. If needed, stir in an additional tablespoon of cream until the mixture is a good consistency for piping. Transfer the mixture to a pastry bag fitted with a decorative tip; set aside.
*If opting to use the flavored cream cheese, let soften until easily stirred and proceed as above.
Slice the cucumber into ½-inch thick slices. Gently scoop out most of the seeds from the center of each slice, leaving a small portion to keep the filling from falling out. Arrange the slices on a serving platter. Pipe a dollop of the filling onto each cucumber slice. Serve chilled. (Note: These can be assembled and refrigerated up to 6 hours in advance of serving.)
